"Maxwell, Einstein, and Their Impossible Demons"

In 1870, James Clerk Maxwell proposed a thought experiment, and in 1907 Albert Einstein made a prediction. Both ideas were based on a mythical Demon, who could do things that they deemed "impossible to us." In this talk, I will describe how we have realized these Demons in the laboratory, and how they enable the control and study of matter.
